Cinnamon-Sugar Roasted Chickpeas
- High fibre

1 ½ cups chickpeas (rinsed)
1 tablespoon sugar
1 teaspoon ground cinnamon
⅛ teaspoon ground pepper
1 tablespoon avocado oil
Preheat the oven to 450 degrees F. Dry the chickpeas and spread them on a baking sheet. Bake for 10 minutes. Combine sugar, cinnamon and pepper.
Transfer chickpeas to a bowl, and mix oil and cinnamon sugar mixture to it. Bake again for 15 – 20 minutes until it becomes brown and crunchy. Let it cool down.
