Chickpea & Quinoa Bowl

Ingredients:
200 gms roasted red peppers
¼ cup almonds – slivered
4 tablespoons extra-virgin olive oil
1 garlic clove – minced
1 teaspoon paprika
½ teaspoon ground cumin
¼ teaspoon crushed red pepper (optional)
2 cups quinoa – cooked
½ cup green pitted olives – chopped
¼ cup red onion – finely chopped
400 gms chickpeas
1 cup cucumber – diced
¼ cup crumbled feta cheese
2 tablespoons parsley – finely chopped
Cooking process:
Combine and blend peppers, almonds, 2 tablespoons oil, garlic, paprika, cumin and crushed red pepper (optional) until it is fairly smooth. Combine quinoa, olives, red onion and remaining oil in a medium bowl. Divide the quinoa mixture into 4 bowls. Before serving, add equal amounts of chickpeas, cucumber and red pepper sauce. Top with feta and parsley.
For storing: Refrigerate red pepper sauce and quinoa separately. Mix just before eating.
