500 grams of boneless, skinless chicken breast
1/2 tablespoon of grounded pepper
3 tablespoons of nonfat plain greek yogurt
3 tablespoons of cider vinegar
3 tablespoons of minced onion
2 tablespoons of extra-virgin olive oil
1/8 tablespoon of salt
1 medium chopped tomato
1 chopped avocado
8 large leaves of chopped lettuce
4 10-inch whole wheat tortillas
Cooking process:
Preheat the grill to medium-high
Sprinkle 1/4 tablespoon of pepper on both sides of the chicken. Oil the grill rack. Grill the chicken and turn them once or twice in 15 to 18 minutes. Then transfer them to a clean cutting board and let them cool for 5 minutes.
In meanwhile, whisk vinegar, yogurt, oil, onion, salt, and the balance 1/4 tablespoon of pepper in a large bowl. Chop the chicken into bite-size and mix them in the bowl with tomato and avocado; toss them to mix well.
Now place 2 lettuce leaves on each tortilla and the chicken mix above. Roll them like a burrito, cut them in half, and serve.
