Any color, 4 medium size capsicums
1/4 teaspoon of salt, divided*
1/4 teaspoon of ground pepper, divided*
8 white eggs
1/4 cup Mexican-blend shredded cheese
Divided*: Don’t mix it all at once, divide the ingredient throughout the cooking process
Cooking process:
Preheat the oven to 400°F and coat the baking pan with cooking spray
Cut the capsicums in half through the stem end. Remove the seeds and ribs. Place the capsicums on the pat with cut-side upwards and sprinkle 1/8 portion of teaspoon salt and pepper in each
Bake the capsicums for 15 minutes, and remove the pan from the oven. Crack 1 egg in each half of the capsicum, then top each with half a tablespoon of cheese
Bake till the egg whites turn good, 15–20 minutes. Sprinkle with some coriander, if desired
