Ingredients:

2 teaspoons extra-virgin olive oil

¼ broccoli (chopped)

¼ spinach (chopped)

1 egg

1 tablespoon low-fat milk

2 tablespoons Cheese (shredded)

⅛ teaspoon salt

1 tablespoon sour cream

1 tablespoon chives (chopped)

Cooking process:

Heat oil in a nonstick pan over medium heat. Combine broccoli and spinach. Cook for 2-4 minutes until bright green and tender. Whisk egg and milk, add the mix to the pan and top with vegetables. Spread out the omelette and continue to cook for 1 to 2 minutes. Sprinkle with cheese and salt. Use a spatula to roll it into an omelette. Serve with sour cream and chives.
