3 cups of rolled gluten-free oats
1 1/2 cups of low-fat milk
2 ripe bananas—masked 3/4 cup
1/3 cup of packed brown sugar
2 lightly beaten eggs
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
1 teaspoon of vanilla extract
1/2 teaspoon of salt
1/2 cup of chopped toasted pecans
Cooking process:
Preheat the oven to 375°F. Coat a muffin tin with cooking spray
Combine oats, low-fat milk, brown sugar, bananas, eggs, cinnamon, baking powder, vanilla extract, and salt in a large bowl
Mix the toasted pecans along with the mixture, and divide the combination among the muffin cups (1/3 in each cup)
Bake it for about 25 mins (until a toothpick in the center comes out clean), and cool it in the pan for 10 minutes. Then take them out with a wire rack
