Apple-Pie Baked Oats
2 tablespoons unsalted butter
2 large, firm, sweet apples, thinly sliced
1 teaspoon ground cinnamon
1/4 cup brown sugar
2 cups whole milk
2 large eggs
3 cups rolled oats
3 tablespoons vanilla protein powder
2 tablespoons chia seeds
1 teaspoon baking powder
Maple syrup or plain Greek yogurt for serving
-Preheat the oven to 375°F. Coat a 9/13-inch baking dish with cooking spray, and melt butter in a 10-inch skillet over medium-low heat.
-Add sliced apples and cook; stir well for 1 to 2 minutes and add cinnamon; cook and stir until the cinnamon is toasted and fragrant for 1 to 2 minutes
-Add brown sugar; cook and stir until apples turn soft, 3 to 5 minutes
-Whisk eggs and milk in a large bowl; stir in oats, chia seeds, protein powder, and baking powder. Add the apple mixture and stir until combined
-Transfer the batter to the prepared baking dish, and spread them evenly. Bake until the edges turn golden brown, for 30 to 35 minutes. Place on a pan to cool slightly for about 10 minutes before cutting them into 6 slices.
-Top them with a dollop of yogurt or a drizzle of maple syrup, if desired
